1 cup raw brown rice, cooked
1 tbsp. butter or safflower oil
1/2 onion, chopped
1 clove garlic, minced
2 tbsp. pine nuts or sunflower seeds
1/2 cup basil leaves, chopped
1 cup freshly grated Parmesan or Gruyere cheese
Sea salt and black pepper
2 tbsp. whole wheat breadcrumbs

Directions:
Preheat oven to 350 degrees. Butter a 2 qt. baking dish. Heat oil or gutter in a frying pan and add onion, garlic, and pine nuts or sunflower seeds. Saute until onion is tender. Add rice and basil, mix together well, and remove from heat. Add salt and freshly ground pepper to taste and stir in cheese. Transfer to baking dish., Top with breadcrumbs and bake 30 minutes.
