1 lb. pork tenderloin (2 tenderloins)
1/8 tsp pepper
Vegetable spray
1 tsp. olive oil
1/4 tsp. cider vinegar
1 tbsp. honey
1 tsp. Dijon mustard

Directions:
Directions:
Trim fat from tenderloins; sprinkle with pepper Coat large nonstick skillet with vegetable spray. Add oil and set on medium-high heat until hot. Add tenderloins and brown for about 10 minutes.

Meanwhile, preheat oven to 400 degrees. Place tenderloins on a rack coated with cooking spray. Place rack in a shallow roasting pan. Mix together vinegar, honey and mustard in a small bowl and brush over tenderloins.

Insert meat thermometer into thickest part of the tenderloin. Bake 30 to 35 minutes or until meat thermometer reaches 160 degrees. Baste often with vinegar mixture.
