4 Turkey Cutlets
1/2 c. Dry White Wine
1 Lemon - Sliced Thin
Artichoke Hearts To Taste
Butter

Directions:
Directions:
Pound the turkey cutlets to tenderize. Roll meat in flour and brown in a frying pan. Cast iron is best. When meat is browned remove and set aside.

In the same pan, add butter, white wine, slices of lemon and artichoke hearts and bring to a boil. Stir well to remove brown bits for the bottom of the frying pan.

Add turkey and simmer to taste.

Each spring we would take customers to the Willow Lake Hunt Club in Three Rivers, Michigan turkey hunting. The hunting was always fun and our customers always left as our friends.

I used to enjoy making this recipe with the wild turkeys that we brought home from the hunt. It is delicious with turkey or chicken.
