Ingredients: Dough: 4 cups flour 2 eggs 1 cup warm water 1 tbsp salt
Cheese Filling: 1 pound ricotta cheese 4 oz grated Mozzarella 3 tbsp grated Parmesan 2 tsp sugar 1 egg slightly beaten 1 tbsp parsley 1/4 tsp salt 1/4 tsp pepper

Directions:1) Mix all ingredients for dough and knead into ball. Add flour if sticky. Set dough aside to stand for 10 min. 2) Using a mixer, combine all ingredients for cheese mixture until well blended. 3) Roll out dough as thin as possible. Scoop small amounts of cheese mixture in balls a few inches apart from each other on one half of the dough sheet. Fold over the other half of dough sheet on top of cheese balls. Use Ravioli press or knife to cut raviolis apart. Press ends of dough together with fork if you do not have a ravioli press. 4) Freeze immediately for future use or boil until they float on the water. Drain and serve. |

Notes: Raviolis can be served with a tomato-based sauce or with butter & parsley flakes. Great with Italian bread and red wine.
