2 T. Vegetable oil

1 large purple onion

1 large yellow onion

1 large green pepper

2 large red peppers

2 large yellow peppers

2 – 24 oz jars Paul Newman’s Marinara Sauce

1 T. Cajun or other seasoning

1 tsp. Cayenne or Chipotle pepper

1 tsp. black pepper

1 ½ tsp. salt

3 pounds shrimp, peeled & deveined

1 pound crab meat, claw or white

2 pounds fresh or frozen sliced okra

Directions:
Heat the oil in a LARGE pot over medium heat.

Add the onions and peppers and cook until slightly soft.

Add the sauce, 2 cups of water and all seasonings.

Simmer for 30 minutes over low heat.

Add the shrimp, crab & okra and simmer 45 minutes or more.

Serve immediately with hot rice, or refrigerate overnight or longer (best of all).

To serve: reheat slowly, put ½ cup hot rice in each bowl and scoop 1 cup of gumbo over it.
