2 c fresh broccoli florets
2 c fresh cauliflower florets
1 can (10 oz.) cream of mushroom soup, undiluted
1/2 c butter, melted
1 box (6 oz. ) seasoned croutons, crushed
2 eggs
1/2 c mayonnaise
1 medium onion, finely chopped
1 c sharp ceddar cheese, grated and divided

Preheat oven to 350º. Cook vegetables separately in boiling, lightly salted water for 5 minutes. Drain thoroughly. Distribute evenly in lightly buttered 11 x 7 inch casserole. Beat eggs; combine with mayonnaise, onions, mushroom soup and 1/2 c cheese. Pour evenly over vegetables. Sprinkle remaining cheese over the top and level gently with back of spoon. Pour melted butter over entire top of casserole. Distribute crushed croutons over melted butter. Crumbs absorb the butter as casserole cooks. Bake 40 minutes

Prepare early in day or preferably a day ahead so that flavors blend. The receipe says to bake just before serving and it is good hot from the oven but I even like this cold
