Beef - Potluck Casserole-- Recipe

1/3 C Vegetable Oil
3 C Lean Ground Beef
5 medium Onions-minced
6 cloves of Garlic- minced
2 (16 oz.) cans of Tomato Paste
2 (16 oz.) cans of Corn
1 bunch (1/2 lb) Celery
3 Green Peppers(optional)
1 tsp Salt
1/4 tsp Pepper
1 lb. Medium Egg Noodles
1 1/2 lbs. of shredded Cheddar cheese

Heat oil in 16 to 20 quart stockpot.
Add meat and cook, add onions and garlic, cook until the onions are done.
Add tomato paste, corn, celery, peppers, seasonings.
Simmer for 5 minutes until slightly thickened.
Stir in cooked noodles.
Simmer covered for 30 minutes
Stir in cheese until melted.

Top each serving with extra cheese.
