1 16 oz pkg split green peas
7 c water (up to 8 cups)
1 ham bone or smoked pork hock
2 c potatoes, diced
1 1/2 c onions, chopped
1 c celery, cubed
1 c carots, sliced
1 garlic clove, crushed
1 tsp salt or to taste
pepper to taste
1/4 tsp hot sauce (Tabasco)

Directions:
Directions:
Combine all ingredients. (May be prepared in advance to this point. Cover and refrigerate overnight.) Place in slow cooker. Cook on proper setting according to manufacturers' directions for 6 to 8 hours. Just before serving, remove bone or hock. Cut meat from bone into bite-size pieces. Return to soup. Makes 10 1/2 cups. (7 hours works perfectly in my cooker.)
