2 c dried beans, soak 4 hours and drain
1/4 c oil
4 med onions coarsly chopped
2 T minced garlic
2 carrots chopped
4 celery stalks, chopped
1 T ground cumin
2 bay leaves
2 T parsley
1 ham bone or smoke pork but
1 t salt, 1 t pepper
2/3 c dry sherry

Cook 2-3 hours. Serve over white rice. Top with sour cream, onions and jalepenos.
