1 Tbl Olive Oil
1 lb boneless chicken (breasts if desired) cut into cubes
¼ Cup chopped onion
1 Cup chicken broth
1 4 ox can chopped green chilies
1 18 oz can white kidney beans (cannellini) drained

Spice Blend
1 tsp chunky dried garlic or fresh garlic
1 tsp ground cumin
½ tsp oregano
½ tsp cilantro
1/8 – ¼ tsp. Red pepper

Toppings:
Shredded Monterey Jack Cheese
Slice Green onions

Directions:
Directions:
Mix together ingredients for spice blend and set aside
Cook chicken in olive oil until just done. Remove and keep warm
Add chopped onion to pan and cook 2 minutes. Stir in chicken
Broth and spice blend. Simmer for 30 minutes. Stir in cooked
Chicken, green chilies and beans and simmer for 10 minutes.
Garnish with cheese and onions.
