3 lb whole beef tenderloin (ask butcher to tie the tail under)
3 T coarsley ground pepper
2 T olive oil
1 t grated lemon peel
1 t salt
2 garlic cloves, minced

Directions:
Directions:
Combine all ingredients and rub over tenderloin. Place on creased rack or foil lined pan. Bake uncovered at 400 for 45-60 minutes or until desired doneness. I use a meat thermometer. Let set 10 minutes before cutting to secure juices.
