"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

1 slightly beaten egg
2/3 cup chopped onion
1/2 cup grated Parmesan cheese
1/4 cup snipped fresh basil or 1 tbsp. dried basil
1/4 cup catchup
2 cloves garlic, minced
1/4 tsp. salt
1/3 tsp. pepper
1 lb. lean ground beef
1 lb. ground turkey
8 hamburger buns, split and toasted
8 lettuce leaves
8 tomato slices

In a large bowl combine egg, onion, Parmesan cheese, basil, catchup, garlic, salt, and pepper. Add ground beef and turkey; mix well. Shape meat mixture into eight 3/4 inch thick patties.

For a charcoal grill, grill burgers pm the rack of an uncovered grill directly over medium coals for 14 to 18 minutes or until meat is done (165 degrees), turning once halfway through grilling. (Burgers will appear pink when done because of the catchup in the mixture.) (For a gas grill, preheat grill. Reduce heat to medium. Place burgers on grill rack over heat. Cover and grill as above.)Remove burgers from grill.

Serve burgers on buns with lettuce and tomato.
