1 small onion, chopped
1 tbsp olive oil
1 lb lean ground meat (beef, Jimmy Dean Low Fat sausage, or chicken)
2 medium potatoes, cubed
28 oz canned crushed tomatoes
16 oz frozen vegetable gumbo mix (I use 99 cent Food Lion brand)

Sauté the onion in oil until clear. Add two cups water and bring to simmer after stirring in lean ground meat (no need to brown separately, unless fatty) Don’t put meat in hot water, will have one big meatball. Add cubed potatoes and can of crushed tomatoes. Return to simmer, cook 15 minutes. Add bag of gumbo vegetables and simmer 30 minutes more. Add beef seasoning to taste (about 1 ˝ tsp). Adjust salt and pepper. Serve with hot cornbread.
