Smoked Mozzarella Burgers Recipe

1 lb ground sirloin
1 tbsp chopped fresh parsley
1 tbsp finely minced onion
1 tsp - 1 tbsp Worchestershire sauce (to taste)
1 clove garlic, finely minced
3 tbsp extra virgin olive oil, divided
1/4 lb smoked fresh mozzarella
8 white button or baby portabella mushrooms, sliced (optional)
4 sliced bacon, cooked (optional)
4 slices Swiss cheese (optional)
4 kaiser rolls or buns

Cut smoked mozzarella into very small cubes. This is most easily done if the cheese is placed in the freezer for approximately 1 hour. Mix together ground sirloin, parsley, onion, Worchestershire sauce, garlic, 1 tbsp olive oil, smoked mozzarella, and salt and pepper to taste. Grill until cooked to desired doneness, approximately 5 minutes per side for medium. If using the Swiss cheese, add during the last minute of cooking, then cover burgers with a foil tent until cheese melts. If desired, saute mushrooms in remaining oil. Toast buns, if desired. Place burgers on buns and top with mushrooms and bacon. Serve immediately.
