12 large mushrooms
3 T. butter
1 small onion, diced
1 c. fine soft bread crumbs
2 T. cream or cooking sherry
salt and pepper to taste
marjoram, rosemary

or oregano to taste

½ c. chopped cooked chicken,
OR ¼ c. chopped unsalted nuts
ham or shrimp
OR cooked bacon

Preheat broiler to 400º F. Remove mushroom stems and chop finely. Reserve mushroom caps.

Place chopped stems with chopped onions in a skillet with 1 T. butter and simmer for about five minutes. Add remaining ingredients; stir well and heat through.

Place mushroom caps on a baking sheet (top side up) and brush with remaining melted butter. Broil for about two minutes. Invert mushrooms (top side down) and fill with stuffing. Brush again with melted butter for about three minutes longer and serve warm.
