Betty Jane's Honey Bars

Preheat oven to 350o.

Mix together with spoon:
3/4 cup cooking oil
1/4 cup honey
1 cup white sugar
1 egg

Sift dry ingredients as follows and mix into above mixture.

2 cups flour
1 tsp. baking soda
1/2 tsp. salt
1-1/2 tsp. cinnamon
Icing:

1-1/2 cups powdered sugar
3 Tbsp. mayonaise
4-1/2 tsp. water
1-1/2 tsp. vanilla

Betty Jane's Honey Bars

Preheat oven to 350o.

Mix together with spoon:
3/4 cup cooking oil
1/4 cup honey
1 cup white sugar
1 egg

Sift dry ingredients as follows and mix into above mixture.

2 cups flour
1 tsp. baking soda
1/2 tsp. salt
1-1/2 tsp. cinnamon

Next, mix in 3/4 to 1 cup chopped nuts (walnuts or pecans are best).
Mixture will be very thick. Spray or lightly grease 10 x 15 cookie pan
with sides. Press mixture evenly onto pan with your hands. Bake 16 to
18 mins. until lightly browned. Watch carefully as not to overbake.
Remove from oven and cool 5-10 mins. while you make icing.

Icing:

1-1/2 cups powdered sugar
3 Tbsp. mayonaise
4-1/2 tsp. water
1-1/2 tsp. vanilla

Mix icing ingredients and spread on warm cookie mixture. Cool a few
mins. and cut into bars. Makes 3-4 doz. depending on size of cuts.
Store in tupperware container with wax paper between layers. Enjoy! I
have yet to meet anyone who does not LIKE this cookie! It is also very
EASY to make. Let me know how you all like them.
