3 large granny smith apples, peeled and shredded ( about 4 cups)
2 cups sugar
½ cup oil
2 large eggs
2 teaspoons vanilla
1 cup walnuts chopped (optional)
1 cup craisins, or dates, raisins (use what ever you have on hand/
1 cup all purpose flour
1 tabelspoon baking powder
½ teaspoon baking soda
1 teaspoon salt
1 tablespoon cinnamon
½ teaspoon nutmeg

Directions:
Directions:
Using the large holes of your grater shred the apples. Mix together shredded apples and sugar in a large bowl. Allow setting about 15 minutes until sugar dissolves. Add remaining ingredients; stir to mix well. Set aside.
Heat oven 350º Grease and flour two 8 ½ X 4 ½ inch loaf pans
In a separate bowl, wisk together dry ingredients and then mix in apple ingredients. Stir just until mixed and then pour into greased pans. Bake 45 minutes until center test done. Cool 10 minutes and the turn out onto a rack to cool completely.
