1/2 c carrots - shredded and packed
1 c sweetened applesauce
1/2 c corn oil
1 t vanilla
2 beaten eggs
3/ 4 c sugar
2 c all purpose flour
1 t baking powder
1/2 t baking soda
1/2 t salt
1 t cinnamon
1/2 t nutmeg
1/2 c nuts

Directions:
Directions:
Mix dry ingredients together. Pour into greased and floured loaf pan. Combine 5 T sugar and 1/2 t cinnamon. Sprinkle over top of loaf. Bake at 325º for one hour or until toothpick comes out clean.
