Banana Bread II Recipe

1 1/2 c whole wheat pastry flour
1/3 c powdered milk
1 t salt
2 t dbl acting baking powder
1 c chopped nuts
1 1/4 c mashed bananas
grated rind of 1/2 lemon
3 T veg oil
1/3 c honey or dark molasses
1/2 c wheat germ

Sift together dry ingredients. Add nuts and mix until covered with flour. Add bananas, molasses, lemon rind, oil and wheat germ.

Stir with no more than 40 strokes. Grease loaf pan; pour batter into pan, forcing into corners. Make indentation lengthwise through center. Bake at 350 for 45 minutes.
