1 onion, finely chopped
1 clove garlic, crushed
2 carrots, diced
3 medium zucchini, diced
2 tbsp. olive oil
1 tbsp. paprika
Pinch of nutmeg
1 heaped tbsp freshly chopped parsley
1 tbsp. tomato past
14 oz. can tomatoes
1 1/2 cups cooked white kidney beans or 14 oz/ can, drained and washed
2/3 cup tomato juice or stock
Salt and pepper
Sour cream or plain yogurt to serve

Directions:

1. Put the onion, garlic, carrots and zucchini into a pan with the olive oil and saute for 5 minutes until softened.

2. Stir in the paprika, nutmeg, parsley and tomato paste.

3. Add the rest of the ingredients except sour cream or yogurt and cook over a low heat for 10 minutes.

4. Turn onto a hot serving dish and top with a little sour cream or yogurt.
