3 C. flour
1/2 tsp sugar 1/4 C. jam
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
14 tbsp cold unsalted butter
1 cup buttermilk

Directions:
Directions:
Mix as with biscuits, dry ingredients then cut in butter until small pieces only, then add buttermilk. Divide into halves, roll out first section on floured waxed paper to about 1/4 inch thickness and transfer to cookie sheet. Spread with jam and cover with second half rolled out dough.
Bake at 400º for 14-15 minutes until just golden. Best served warm
