2 c. gf flour blend
1 t. xanthan gum
1 t. guar gum
1/2 c. dutch-processed cocoa powder
2 t. baking powder
1 t. salt
16 oz. semisweet chocolate chips
4 large eggs
2 t. vanilla extract
2 t. instant coffee
10 T. butter, softened, but still firm
1 1/2c. brown sugar
1/2 c. sugar

Mix together flour, cocoa, xanthan gum, guar gum, baking powder and salt. Set aside.
Melt chocolate chips in microwave, start with 1 minute, stir. Microwave another 30 seconds and stir. Continue until smooth.
Beat eggs and vanilla lightly in small bowl and sprinkle coffee powder over to dissolve. Set aside.
In bowl of mixer fitted with paddle, beat butter until smooth and creamy. Beat in sugars until combined. At slower speed gradually beat in egg mixture. Scrape bottom and sides of bowl. With mixer on low gradually poor in melted chocolate. Scrape down bottom and sides of bowl. With mixer on low gradually add flour mixture until just combined. Do not overbeat. Scrape down bowl. Cover and let stand at room temperature until consistency is scoopable and fudgelike, about 10 minutes.
Heat oven to 350º. Scoop into golf balls and bake for 10 minutes.
