2 cucumbers
1 onion
1/2 c. dark vinegar
1/2 c. water
1/4 tsp. salt
1/4 c. sugar
Pepper to taste

Directions:
Directions:
Slice cucumbers and onions and place in a glass bowl. Sprinkle a little salt over them and set aside. Combine the remaining ingredients in a saucepan and heat until just hot, not boiling. Pour over the cucumber and onions and let cool. Cover and refrigerate.

If too sweet, add more vinegar. If too sour, add more water and salt.

This salad is much better if you prepare it a day or two in advance to allow the flavors to blend.

Great for BBQs and picnics and will keep in the refrigerator for several days.
