1 Tbsp. Extra Virgin Olive Oil
1 lb. chicken tenders or chicken breasts cut ito strips
Salt, pepper, and cumin to taste
1 Tbsp. minced garlic
1/3 C. grated pepper jack cheese
1/3 C. chicken broth
1 package (Trader Joe's) Spanish Rice, frozen
Optional garnish: Sliced fresh green onions
1/3 C. chunky salsa

Directions:
Directions:
Season chicken tenderloins with salt, pepper, garlic, and cumin to taste. Heat olive oil in large skillet, when hot, add chicken and saute 1 minute per side. Push chicken to one side, add garlic and saute 30 seconds. Sprinkle chicken with cheese, add salsa and broth. Cover and reduce heat. Simmer 2-3 minutes until chicken is cooked through.
Meanwhile, cook Spanish rice in microwave according to package instructions.
Serve rice with chicken
