1 dozen muffin cups
10 ounces of bittersweet or semi sweet chociloate chips
1 stick of unasalted butter
4 large eggs
4 egg yolks
10 tablespoons of sugar
2 teaspoons of vanilla extract
3 teaspoons instant coffee
pinch of salt
2 tablespoons of all purpose flour
Cool whip and confectioners sugar to garnish as desired

1. Stir chocolate and butter in double boiler over low heat until smooth. 2. Remove from heat and cool ten minutes. 3. Using electric mixer, beat egg yolks, sugar, vanilla, and coffee in medium bowl, about 8 minutes. 4. Sift flour over batter then fold in flour. 5. Fold in Choclate mixture. 6. Divide among muffin cups and bake in preheated 400 degree oven for about 12-15 minutes until tops of cakes are puffed and toothpick inserted comes out with moist batter still attached. 6. Sprinkle with confectioners sugar serve with whipped cream
