1 POUND SMALL RED BEANS
1/2 POUND HAM HOCKS OR SMOKED HOCKS (OPTIONAL) CAN SUBSTITUE POLISH SAUSAGE,SMOKED TURKEY if you want
1large yellow onion
3 stalks celery
1 tablespoon parsley
1-2 bay leaves
2 large cloves garlic,chrushed
1/8 pound butter
pepper to taste
1 tablespoon Worchestire sauce
tabasco sauce to taste
salt to taste
3cups cooked white rice
1teaspoon sugar

©Soak beans overnight,be sure to completely cover the beans with water.
next drain the beans
cook the meat 1/2 hours
add beans, simmer 1 1/2 hours uncovered
add chopped onion,crushed garlic, butter,pepper worchestshire sauce,tabasco cook 1 hour
now add salt be very careful because the meat is salty
Serve over rice
