1 - 3oz. pkg. lemon gelatin
1 pkg. vanilla wafers crushed
1-1/2 c. warm water
1 large can evaporated milk - chilled
1/2 cup sugar
Juice and grated rind of one lemon

Directions:
Directions:
Dissolve gelatin in warm water. Add lemon juice, sugar and grated rind. Whip evaporated milk which has been chilled. Add whipped milk (to whipped cream consistency) to gelatin mixture. Pour into 7"x11-1/2" pan that has been lined with crushed wafers. Reserve enough for a top layer of crushed wafers. Chill 4 hours.
