1/4 c olive oil
2 8oz pieces veal shank
creole seasoning
2 stalks celery, diced
3 small carrots peeled and sliced
1/2 onion, diced
salt and pepper
1 small can whole tomatoes
2 sprigs rosemary
2 sprigs thyme
1 1/2 c red wine
2 1/2 c chicken broth

Directions:
Directions:
1. In medium sauce pan add olive oil and heat.
2. Season both sides of the veal w/ creole seasoning and add to oil browning both sides for about 5 min
3. Add celery, carrots and onion
4. season w/ salt and pepper
5. Saute 5 min
6. Add tomato rosemary and thyme, red wine, and broth.
7. Bring to a boil then reduce to simmer and cover
8. Simmer 1 1/2 to 2 hours, until meat is very tender.
9. Season to taste.
10. Serve with mashed potatoes or rice
