3 T olive oil
8oz chorizo or Kielbasa
2 c chopped onions
3 garlic cloves, chopped
1 c chopped red bell pepper
1/4 tsp hot Spanish paprika or hot Hungarian paprika
3 1/4 c chicken broth
1 1/2 c saffron flavored rice
1 lb uncooked peeled deveined large shrimp
1/2 c pimiento-stuffed green olives, halved
1/2 lb scallops
1/4 c dry white wine
2 diced fresh tomato

Heat oil in heavy large skillet over medium-high heat. Add sausage, onions, garlic and bell pepper, and sauté until golden brown, about 8 minutes.

Stir in paprika, then 3 cups broth and rice. Bring to boil. Sprinkle with salt and pepper. Reduce heat to low, cover, and simmer until rice is almost tender, about 15 minutes.

Nestle shrimp into rice, top with tomatoes, olives, and drizzle with 1/4 cup broth and wine to moisten. Cover and cook until shrimp are just opaque in center, about 6 minutes.

Season to taste with more salt and pepper.
