4 c. all purpose flour
1 tsp. salt
1 tbls. sugar
1 1/2 c. vegetable shortening
1/2 c. cold water
1 egg
1 tbls. vinegar

Directions:
In a large bowl, mix flour, salt, and sugar.
Step 1: For tenderness -- cut in about 2/3 of shortening until fine as meal.
Step 2: for flakiness -- cut in remaining shortening to the size of large peas.
Blend together cold water, egg, and vinegar in small bowl. Sprinkle cold water mixture over different parts of flour mixture. Blend, with fork, until the flour is just blended enough with the liquids to hold together. Do not overblend. Take dough up in hands and press gently, into a smooth blended ball of dough. Divide dough into 4 portions. Take one portion, gently shape it into a round, place it on a well floured pastry board, flour, and roll into 1/8" thick circle a little larger than the pie pan, turning over round and flouring as needed. Fold in half, insert into half of pie pan, flip over folded half to cover other half of pan. Put in desired filling. For top crust, after folding in half, make slits in crust and proceed as for bottom crust.
This recipe will make two double crusted pies.
Fill with your desired filling. Bake at 375º until golden (about an hour)
