2 eggs slightly beaten
1 can (16 ounces) pumpkin
1 cup brown sugar
1/2 teaspoon salt
1 1/2 teaspoon cinnamon
1/2 to 3/4 teaspoon ground ginger
1/4 teaspoon cloves
1/2 teaspoon nutmeg
1 2/3 cup evaporated milk
1 ounce amaretto or rum (optional)
1 9-inch unbaked pie shell with high fluted edge
Pecans, walnuts, or almonds for garnish

Directions:

Preheat oven to 430º.

Mix ingredients together. Pour into pie shell (deep dish pie plate is recommended) and bake for 15 minutes.

Reduce temperature to 350º and continue baking for 50 minutes to 1 hour (or until knife inserted in center comes out clean). Remove pie from oven after 30 minutes and place nuts around outside edge of pie. Continue baking for remaining time. Cool on wire rack.
