1-1/2 lb. sweet and/or hot Italian sausage links, casings removed and cut into 1/2" chunks
4 garlic cloves, thinly sliced
2-3 green, red and/or yellow peppers, cut into 1/4" slices
1 jumbo onion (about 1 lb.), cut in half then cut crosswise into 1/4" slices
25-30 oz. jar pasta sauce
1 lb. ziti or penne pasta
8 oz. part-skim mozzarella cheese, cut into 1/2" cubes
1/2 c. freshly grated Pecorino Romano or Parmesan cheese

Cook sausage in nonstick skillet over medium-high heat for 5 minutes or until browned on all sides, stirring occasionally. Drain fat and reduce heat to medium. Add peppers, onion and garlic and cook, covered, 10 minutes or until vegetables are tender, stirring occasionally. Stir in pasta sauce, bring mixture to boil, reduce heat, cover and simmer 10 minutes. Mean while preheat oven to 400 F. Cook pasta 2 minutes less than cooking time recommended on label. Drain pasta and return to pot. Add sauce and stir to coat. Add mozzarella and toss to combine. Transfer to 13x9-inch glass or ceramic baking dish. Sprinkle with Romano or Parmesan. Bake uncovered 20-25 minutes or until top browns and sauce is bubbling. Let stand 10 minutes before serving.
