2 whole chickens, 3 lbs each, cleaned and rinsed
2 TBS olive oil
12 whole peeled garlic cloves
1/2 cup chopped onions
1/4 cup chopped celery
1/4 cup chopped carrots
2 tsp Emeril's Seasoning
2 cup black beans
1 cup guacamole
4 handfuls fried tortilla chips

Directions:

1. Preheat oven to 400ºF.
2. With your hands rub the chickens inside and out with the oil, using 1 TBS per chicken. Insert garlic cloves, 3 per breast, between the breast meat and the skin.
3. Place onions, celery and carrots inside each chicken. Rub each chicken with the seasoning, both inside and out. Coat the chicken thoroughly.
4. Place the chickens on rack in baking pan and roast till crisp and tender about 1 hr. 10 min. Remove from the oven, cool slightly and slice meat.
5. Prepare fried tortilla chips.
6. Heat black beans.
7. To serve, spread black beans on bottom of plate, arrange chicken on beans. Mound guacamole on chicken and cover with tortilla strips.
