1/2 cup finely chopped onion
1/2 cup finely chopped parsley
1 clove garlic, minced
salt and pepper to taste
3 tbsp olive oil
4 large baking potatoes, peeled and sliced
1 1/2 cup chicken or beef broth

Directions:
Directions:
Saute onion, parsley and garlic slowly in oil about 15 minutes. Add potatoes and cook a few minutes, stirring gently. Add broth, dash of salt and pepper. Bring to a boil, reduce heat, cover and simmer until potatoes are done.
