Meat Mixture:
2 to 3 c. shredded cheese
1 1/2 - 2 lbs lean hamburger meat
1 lg. onion, diced
Jalapenos to taste (canned or fresh)
Cornbread:
1 lg. egg, beaten
1 1/2 c. milk
1 tsp. salt
1 (16 oz.) can cream style corn
1/3 c. oil
3 tsp. baking powder
2 c. yellow cornmeal

Directions:
Directions:
Meat mixture: Saute beef and onions until ightly browned. Add jalapenos, let sit, covered, while mixing cornbread. Mix egg, oil and milk. Add dry ingredients and corn. Stir together. Grease a 9x13-inch baking dish. Spread 1/2 cornbread mix in bottom. Add meat and cheese from above and top with remaining cornbread mix. Bake at 400º for 1 hour. This freezes well after cooking.
