1/3 c. shortening
2/3 c. sugar
2 eggs, slightly beaten
1 3/4 c. sifted flour
2 3/4 tsp. baking powder
1/2 tsp. salt
1 c. mashed ripe bananas

Directions:
Directions:
Cream shortening and sugar. Add eggs, one at a time, beating until thick and light-colored. Sift dry ingredients together. Add alternately to creamed mixture with bananas.
Grease bottom of a 4 1/2"x8"x3" inch loaf pan. Pour in batter. Bake at 350º for 60 to 70 minutes or until cake tester inserted in center comes out dry. Let bread cool slightly in pan before turning out.
