3 1/2 c. warm water
2 pkgs. dry yeast
3 tbsp. oil
1 level tsp. salt
1/3 c. sugar or honey
3 1/2 c. whole wheat flour
5 1/2 - 6 c. flour (I use unbleached)

Directions:
Directions:
Put 2 cups warm water in large bowl. Add oil, salt and sugar or honey. In the remaining warm water, stir in 1/2 tsp. sugar or honey and add yeast. Let stand 3 to 5 minutes; then add this to the first mixture. Stir. Add whole wheat flour, first about 2 cups and beat well, then add the rest of whole wheat flour and beat. Then add rest of flour, one cup or less at a time and mix well. When fairly stiff, turn on floured board and kneed until smooth and elastic, about 10 minutes. Return to bowl, grease top. Cover and let rise until double in builk, about 1 1/2 hr. in warm place. Punch down, kneed lightly 2 or 3 minutes. turn out on floured board and cut in 3 parts. Roll each to 3/4" and cut out the size you like and put in lightly greased pan, brush top with oil and let rise in warm place, 20 - 25 minutes. Bake in hot oven 400º about 15 minutes or until golden brown.
