1 medium onion
1 clove garlic, minced
2 tbsp. shortening
3 cups white sauce
1 or 2 cans chopped green chilies
12 corn tortillas, torn into strips
1 chicken or hen, cooked and boned
3/4 lb. cheddar cheese, grated
White Sauce:
6 tbsp. butter
6 tbsp. flour
1 1/2 tsp. salt
3/4 tsp. pepper
3 c. milk

To prepare white sauce, melt butter, stirring with wooden spoon. Add flour and seasoning, stir until smooth and bubbling. Remove from heat. Add milk, bring to a boil, stirring constantly. Boil 1 minute. Add onions and garlic. Mix well. Makes 3 cups.

Cook onion and garlic in hot shortening until golden brown. Add to white sauce with green chilies. Alternate layers of corn tortillas, chicken, white sauce and cheese, in buttered casserole dish. Repeat until all ingredients are used, ending with cheese. Bake at 350 for 35 minutes until bubbling hot.
