2 c. raisins
2 c. water
1 c. unsweetened applesauce
2 tbsp. liquid sweetner
3/4 c. oil
2 eggs
2 c. flour
1 tsp. soda
1 1/2 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla

Boil raisins in water until water has evaporated. Add unsweetened applesauce, eggs, sweetner (she used Equal) and oil. Mix well. Blend in soda, flour, cinnamon, nutmeg and vanilla. Pour into a 8"x8" pan and bake at 350 for 25 minutes or until cake test done with a toothpick in the center. If you divide the cake into 20 pieces, you may have 1 slice in exchange for 1/2 fruit, 1 bread or 2 fat exchanges.
