2 c. raisins
2 c. water
1 c. unsweetened applesauce
2 tbsp. liquid sweetner
3/4 c. oil
2 eggs
2 c. flour
1 tsp. soda
1 1/2 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla

Directions:
Directions:
Boil raisins in water until water has evaporated. Add unsweetened applesauce, eggs, sweetner (she used Equal) and oil. Mix well. Blend in soda, flour, cinnamon, nutmeg and vanilla. Pour into a 8"x8" pan and bake at 350º for 25 minutes or until cake test done with a toothpick in the center. If you divide the cake into 20 pieces, you may have 1 slice in exchange for 1/2 fruit, 1 bread or 2 fat exchanges.
