4 cups chicken broth
1/2 tsp salt
1 cup regular grits
1 cup shredded sharp cheese, divided
1 cup shredded Monterey Jack cheese with peppers
2 TBS butter
6 green onions, chopped
1 green bell pepper, chopped
1 garlic clove, minced
1 lb small fresh shrimp, peeled and cooked
1 10 oz. can diced tomatoes with green chilies, drained
1/4 tsp salt
1/4 tsp pepper

Directions:
Directions:
Bring 4 cups chicken broth and 1/2 tsp salt to a boil in large saucepan; stir in grits, cover and reduce heat, simmer for 20 minutes. Stir 3/4 cup cheddar and Mont Jack cheese into grits. Melt butter in large skillet over medium heat; add green onions, green pepper and garlic. Saute 5 minutes until tender. Stir together green onion mixture, grits mixture, shrimp and the next 3 ingredients. Pour into lightly greased 2 qt baking dish. Sprinkle top with remaining 1/4 cup shredded cheddar cheese. Bake at 350ºF for 30-45 minutes. May garnish with bacon bits.
