3 Boneless Chicken Breasts
2 Cans Chili Beans
2 Cans of Rotel
1 Medium Onion Diced
1 14.5 oz chicken broth
1 can drained corn
1 15 oz can of diced tomatoes
1 packet of taco seasoning (or go to taco seasoning recipe in misc. section).

Directions:
Directions:
In a pan, pour just enough olive oil to cover the bottom of the pan and cook the chicken until done. When done, cute chicken into small pieces and add all other ingredients in a big pot and cook on low to medium-low for at least 4 hours. Add cheddar cheese to each bowl.

You can also make this in a crock pot. You can put everything into the crock pot (including the chicken before cooking). Cook on low for at least 7 hours. Take out the chicken breasts and shred the chicken with a fork and put back in the soup. Mix up and serve.
