1 (16oz)can of potatoes,sliced,liquid reserved
1 cup milk
4 T bubl.tter
3/4 tsp salt
1/4 tea pepper
2 1/4 Cups instant mashed potato flakes
1/2 pint of dairy sour cream
8 oz of sharp cheese
4 Tbl. dry minced onion or 1/2 fresh, chopped
1/2 cup butter or margarine
Grated American cheese

Directions:
Drain potatoes. Reserve liquid add enough water to it to make 2 cups. Pour into a 2 quart saucepan. Add milk, 4 tablespoon butter or margarine. salt and pepper. Bring to a boil. Remove from heat at once. Immediately stir in mashed potato flakes. Cut drained,sliced potatoes into strips fold into mashed potatoes. Stir in sour cream, sharp cheese, minced or fresh onions. Melt 1/2 cup butter or margarine in a 13 inch pan in a 375 degree oven. Pack potatoes mixture into pan on top of the melted butter. Press lightly with the back of a spoon to make even. Sprinkle top with grated American cheese. Bake at 375 degrees for 30 to 40 minutes. When golden brown, place about 3 inches from broiler for 2 to 3 minutes, just at serving time to crisp it. Watch carefully as it burns easily.
