1 POUND OF CRAB MEAT
1/4 STICK OF BUTTER
1/2 GREEN PEPPER (CHOPPED)
2 STALKS OF CELERY, SOME LEAVES INCLUDED
1 MEDIUM ONION
1/2 TSP LEAF MARJORUM
2 TBPS WORCESTERSHIRE SAUCE
1/2 TSP YELLOW MUSTARD
6 TBSP OF FLOUR
1 12 CUP MILK
SALT AND PEPPER TO TASTE
1 EGG
1 PACKAGE OF BREAD CRUMBS.

In a large frying pan melt butter and saute chopped onion, pepper and celery until soft Add marjorum, then stir in flour, mix well. Reduce heat and add milk very slowly. Stir until all lumps are gone. Add mustard, worcestershire sauce and cook until thick. Let cool in bowl. Add crab, mix well. Add salt and pepper, mix well. Flour hands and form mixture into cakes. Beat egg. Dip cakes into egg and then into bread crumbs and fry until brown.
