3 eggs
2 cups sugar
2 teaspoons vanilla
1/2 teaspoon salt
3 teaspoons cinnamon
1/4 teaspoon baking powder
1cup oil
2 cups zucchini
1 cup chopped walnuts
3 cups flour
1 teaspoon soda
Directions:
Directions:
Beat eggs till frothy. Add oil, sugar and continue beating till smooth. Add vanilla, salt and cinnamon. Mix thoroughly. Add dry ingredients; flour, baking powder, soda and beat well. Mix zucchini and nuts. Bake 45 minutes or until it's springs lightly when touched. 350º

At the time this recipe came out we were attending the Quaker Church. The Women's Auxiliary, decided to create a cook book. This was our first and last fundraiser. It was a success because we had mostly elderly women who jumped at the chance of sharing their many recipes. Being a part of the Nazarene Church, was a blessing. Many good, caring and loving people. But like all things every thing must come to an end sooner or later.
