1/3 c. chopped onion
1/3 c. silvered almonds
2 tbsp. butter
1 cup long-grain rich
1/4 cups chicken broth
1/4 tsp. salt

Directions:
Directions:
In a skillet saute onion and almonds in butter briefly. Add rice. Saute until rice is slightly opoque, but not brown. Add sherry, chicken broth and salt. Cover and simmer 20-30 minutes or until lilquid is absorbed. Fluff rice with a fork.

I have made this with instant white rice and it works great but do not cook for so long. Great with any meat or fish dish.
