Romaine lettuce, washed and dried, torn into pieces
Dressing: 1 garlic clove, mashed
A few anchovies, mashed
2 dashes Worcestershire sauce
! T wine vinegar
pepper (to taste)
1 heaping ts. Dijon mustard
1/4 C olive oil
Juice from 1/4 squeezed lemon
1 egg yolk
1/4 C Parmesan cheese, grated
Croutons

Directions:
Directions:
in large wooden bowl, mash garlic and several anchovies
Add Worcestershire sauce, wine vinegar, pepper.
Add Dijon mustard and keep mixing
Add olive oil
Add lemon juice and egg yolk, wishing together
Add croutons and parm. cheese
Mash and mix in romaine lettuce
Top with more croutons, and toss.

The egg yolk can be left out, or use Pastuerized egg in the dressing.
