Crust:
1 1/4 C flour
1 T. powdered sugar
1 stick butter, melted

Filling:
1 pkg. frozen spinach, defrosted and drained
1 small onion, chopped, sautéed in olive oil
3 eggs
1 C whipping cream
salt
pepper

Topping;
Shredded cheddar cheese around 8 oz.

Directions:
Directions:
Pie crust: Mix flour, sugar and butter in the food processor
Form dough into a 9 inch quiche pan (press with your fingers)
Bake 425 till brown (about 7 t0 minutes)

Filling: Beat eggs, add cream, spinach, onion, salt and pepper...mix well ..pour into baked pie crust..bake at 375 till lightly set (about 30 minutes) add shredded cheddar cheese to top..bake another 10 to 16 minutes. Serve warm.
