1 lb dried cleaned pinto beans
1 whole onion
1 whole head of garlic
Ham bone or left over ham or salt pork or bacon
1 tomato, chopped
1 onion, chopped
1 bunch of cilantro, chopped
1 or 2 Chile serranos or jalapeņos, chopped

Soak beans overnight in water. If you forget and want beans for that day. Clean and sort beans place in a pot with water to cover; bring to a boil, cover pot turn off heat and allow to rest for 1 hour. Drain, pour more water to cover bring to a boil add ham, onion garlic let simmer for several hours. Remove ham bone, onion and garlic pod when beans are soft. Add salt to taste. Before serving add chopped vegetables for ala charra style beans
