1 can (28-oz) tomatillos, drained
1 medium onion, chopped
1/2 cup cilantro, chopped
4 Tbsp. olive oil, divided
2 cloves garlic, coarsely chopped
1/4 cup minced red peppers
1 can (7 oz) chipotle, minced
1 tsp. salt
1/2 tsp. ground coriander
1/4 tsp. ground nutmeg
1 lb. each ground pork and ground beef
1 Tbsp. dried bread crumbs
1 egg, lightly beaten

1. Heat oven 350. In food processor, chop tomatillos, onion, 1/4 cilantro, garlic and 2 Tbsp. oil. Season with salt and pepper. Set sauce aside. 2.- In a large skillet, heat remaining oil, onion and red pepper, cook until tender, about 4 min. Stir in chipotle, salt, coriander and nutmeg. Remove from heat, cool. 3.- Combine ground pork and beef with bread crumbs, egg and onion-red-pepper mixture. Form meat mixture into 1" balls. Place on foil-lined baking sheet and bake for 15 min. or until cooked through. Serve with warmed tomatillo sauce. Garnish top with remaining cilantro
