4 Boneless chicken breasts
1/4 TB soy sauce
2 TB honey
1/4 cup hot water
1/2 cup peanut butter
1/4 tsp. hot red pepper flakes
1 (8 oz) can pineeapple chunks in unsweetened pineapple
juice, drained
2 cups of rice
1/4 cup chopped green onions
2 TB chopped peanuts

Directions:
Directions:
1-Cut chicken into 1 1/2-inch pieces. In small bowl combine
lime juice, soy sauce and honey;mix well. Reserve 1/4 cup.
Place chicken in food storage add;add 1/4 soy sauce mixture.
Refrigerate chicken 30 minutes or longer.

2-Slowly stir hot water into peanut butter in small bowl; mix
until smooth. Add reserved soy sauce mixture and hot
pepper flakes; mix well.

3-Heat boiler. Remove chicken from marinade; discard
marinade. Thread chicken and pineapple chunks onto
skewers. Broil 4 inches from heat 7 to 10 minutes, turning
once, until chicken juices run clear.

4-Meanwhile, prepare rice according to package directions.
Place rice on serving dish; sprinkle with green onions and
chopped peanuts. Serve kabobs over rice and with peanut
sauce on the side.
